Another of our favorite applications, oysters have a delicate, subtle flavor. An acquired taste for some, they capture the briny salt of the sea with a creamy texture that elevates them as a delicacy for seafood lovers.
Interestingly, the history of sauces normally served with oysters often conflict with the great taste. As our friends at Island Creek Oysters note, cocktail sauce originated as a strong-tasting sauce designed to mask the taste of rancid oysters, in the days when shaky refrigeration made that a common concern.
